Mushrooms on Toast

As I don’t get home from work until after 7pm, I don’t want to spend ages making dinner. Last week I tried out mushrooms on toast, topped with a fried egg, and it was a winner!

You need: A selection of mushrooms (I used chestnut and small portobello), sliced, a couple of cloves of garlic, minced or sliced, chopped parsley, butter and bread (I used sourdough), eggs

Step 1: melt a knob of butter in a frying pan and saute the garlic and sliced mushrooms

Step 2: toast thick slices of the bread (suggest 2 slices per person, depends on appetite and size of bread)

Step 3: fry a couple of eggs (again suggest 2 per person)

Step 4: add the parsley to the mushrooms and season to taste. Put the mushrooms on the toast and top with the fried egg.

Step 5: scoff the lot!

This would be really lovely with a poached egg, but I FAIL at poaching eggs so we made do with fried. So delicious…….
